Counts cover restaurants, cafés, pubs and takeaways in this directory, not every business on each island. “Gluten-free” requires explicit menu wording. Vegetarian includes dishes labelled vegan. Likely vegetarian or vegan dishes are inferred conservatively from dish names and listed ingredients and shown separately from menu labels. They need confirmation. Mixed vegetarian/vegan sections do not establish that every dish is vegan; conflicting labels are excluded. Dietary codes are treated as labels only where the venue’s own key was checked.
A zero means no matching evidence at the selected level in the text menus we hold, not that an island has no suitable food.
